I love oatmeal cookies, chocolate chip cookies, and anything with coconut in it. I was at Costco the other day and bought a variety tray of cookies. They were all decent, but one really stood out. From what I could tell, it was a coconut, oatmeal, chocolate chip cookie. After a little research, I came across a few recipes that sounded pretty good. Of course, I can’t just follow someone else’s recipe—I picked and chose, modified and tweaked it until it was perfect. These cookies came out chewy and delicious.
Preheat the oven to 350 degrees. Mix together melted butter, brown sugar, and granulated sugar until creamy. Next, add the eggs and vanilla. In a separate bowl, whisk together flour, salt, and baking powder. Then, mix the dry ingredients into the creamed butter mixture together until thoroughly combined. Next, add the old fashioned oats, coconut, and semi-sweet chocolate chips and mix until well blended. Now comes the fun part! Using a small ice cream scoop or tablespoon, scoop mounds of the cookie dough onto a parchment paper-lined baking sheet. Bake for 12-14 minutes and then take a deep breath to take in the scent of these perfect little bits of heaven. Try not to eat them all in one sitting! Enjoy!
