Happy New Year, everyone! Today, we are sharing a wonderful, healthier breakfast that can be prepared on the weekend and enjoyed all week by just heating one or two of these little gems in the microwave for 30-60 seconds. I don’t know about you, but one of my wife’s favorite things are the sous vide egg bites from Starbucks. They are quite delicious, but who can afford to eat those every day? One day, I decided to surprise my wife by making my own version. Mine are not sous vide–instead, they are oven baked and are DELICIOUS! Depending on your knife skills, it only takes about 30-40 minutes from start to finish and you end up with 12 amazing Egg Bites. This is the ultimate customizable recipe as you can use whatever meat, cheese, and veggies you desire.
Start by spraying a muffin tin with cooking spray. To each muffin cup, add your favorite chopped ingredients (for my Egg Bites, I added fresh onions, asparagus, cubed ham, and some shredded mozzarella and provolone cheese). Mix the eggs and milk together, then carefully pour the egg mixture into each muffin cup and bake at 350 degrees for 20-25 minutes. Egg Bites are a fairly healthy and very convenient option for mornings–what’s easier than a quick breakfast? Enjoy and may you all stick to your New Year’s resolutions!
