Growing up, I was never a fan of ribs. I always said they were too much work for too little meat or they were too messy and not worth the time. Then one day about twelve years ago, I met this fantastic human being, Brian Palmer, who has now become a brother to me. One night, he had me over for dinner and he was making ribs. At first, I thought I wouldn’t like them because I’m not a ribs fan. However, he taught me the secret to perfect ribs and I’ve been cooking them pretty much the same way since then. I like to use pork baby back ribs for this recipe. In my opinion, you get a fair amount of meat with less fat than other types of ribs. Everyone knows I’m a huge fan of Costco, so it’s no shocker that I get most of my meat there.
Take the rack of ribs and cut it into individual ribs—more flavor gets into the meat and you won’t tear them apart trying to cut them after they cooked and falling off the bone! Next, if you have time, soak them in pineapple juice for 6 to 8 hours. This makes them even more tender because fresh pineapple juice has an enzyme that tenderizes the meat. Remove the ribs from the marinade, pat them dry, and place them in a single layer on a baking sheet. Preheat the oven to 300 degrees and finish prepping the ribs for the oven. Season the ribs with Sylva’s Kitchen Fault Line seasoning and top with a fair amount of brown sugar. Cover with foil and bake for three hours. This recipe is so easy! There’s very little prep time and you can just set it and forget it. Plus, it makes the house smell amazing! Once the ribs are done, transfer them to another baking sheet (out of the drippings) and top with your favorite barbecue sauce or whatever sauce you like. Next, turn on the broiler and place the ribs under the broiler for 3-5 minutes, uncovered. Take out, flip the ribs and sauce the other side, then back in the oven for another 3-5 minutes and you’ll have the best fall-off-the-bone ribs you’ve ever had.
