I don’t know about you, but I love fried chicken. It gives you that good, old fashioned family Sunday supper feeling. You know the type–getting together with your loved ones and breaking bread with them. For me growing up, we would have Sunday supper and watch the Disney movie of the week on the family channel. It was my favorite day of the week! And what better to serve than fried chicken? Today, we are talking about a different take on fried chicken–chicken fritters.  This recipe popped up on my Facebook and I had to try it. Cheesy Chicken Fritters Recipe – NatashasKitchen.com. They have everything you love about fried chicken and more. These delicious morsels have fresh dill, cheese, flour, eggs and seasoning and are PACKED full of flavor! Another thing I love about this recipe is the fact that you can do so many variations with minimal changes to the ingredients. My family has fallen in love with these! They are great served with a garlic aioli, but they’d be great with a gravy or dipping sauce of any sort. The possibilities are endless! They can be an appetizer; you could make them into sandwiches or serve them with mashed potatoes and gravy.

Start by cutting the chicken into small cubes. Next, add egg, flour, mayonnaise, cheese, dill, and seasoning. Mix it all together very well and refrigerate for at least two hours or even overnight. When you are ready to cook them, scoop the mix into your skillet of heated olive oil in roughly 1/4 cup portions and fry until cooked thoroughly—roughly 3-5 minutes per side. Serve with your favorite sauce or gravy and voila, you have these scrumptious fritters. So next time you’re craving fried chicken, give these a try. You will not be disappointed. Enjoy!
