I don’t know about a lot of people, but I have always been fond of meatloaf…if it’s made right. Not too heavy and not too dry. I know some people are not huge fans because they’ve never had good meatloaf. Meatloaf is an inexpensive way to feed a family of any size, and it’s quite easy because you don’t have to stand over the stove cooking. You can mix the ingredients, shape or into a loaf, add desired veggies, and toss it into the oven. Then, you’re free to continue on with whatever it is you need to do. I love meatloaf that is made with beef, but today we are talking about Turkey. This meatloaf is Turkey-based and loaded with garlic, spinach, and flavor. Because I use Turkey in this recipe along with the spinach, this meatloaf comes out so moist and delicious. It’s also a great way to add vegetables to picky eaters’ diets.
To make this delicious meatloaf, start off with ground Turkey. Next, finely chop spinach, onion, garlic, and basil in a food processer it until it’s a loose paste (very finely chopped and mixed well). Sautee this mixture in avocado oil until the onions are translucent, then add it to the Turkey along with egg, Worcestershire sauce, ketchup, Sylva’s Kitchen Fault Line seasoning, and Italian seasoned panko breadcrumbs. Mix together until combined thoroughly. Place the mixture into a greased baking dish and shape into the desired shape.
When I was growing up, my mom would occasionally make meatloaf with a red sauce on top, and one of my favorite things about the dish was that the carrots were cooked along side the meatloaf, smothered in the red sauce–Best Flavors Ever! Parboil some baby carrots and then place them around the loaf. Now you’re ready to make the glaze. For the glaze, place a can of diced tomatoes, some tomato paste, ketchup, Worcestershire sauce, spicy brown mustard, and a little brown sugar in a food processor and process until it’s a thoroughly mixed sauce. Pour about half of the sauce over the meatloaf, making sure the meatloaf is covered evenly with a fairly thick layer. Next, add a little water to the remaining sauce and mix it together, then pour it evenly over the carrots and any other vegetables you decide to add to the mix (potatoes are another great one to add). Cover with foil and bake in a 350 degree oven for 40-45 minutes. Remove the foil and bake for another 15-20 minutes until thoroughly cooked. Let cool slightly and enjoy! Next time you want a semi-healthy meatloaf, give this one a try. It’s delicious!
