I don’t know about you, but I am a huge fan of apple turnovers. The perfectly flaky crust along with the slightly sweet apple filling is a match made in heaven! Now, I’ve never personally made them, but I have something that I want to share with you today that in my opinion is just as good and so much easier. The other day, I had taken out some puff pastry that I had in the freezer. I was going to make pork tenderloin Wellington, but ended up doing something different. I also noticed I had some apples that needed to be eaten pretty soon before they went bad. This got me thinking about trying a quick and easy dessert. It was a great success!
Peel and core 4-5 medium-sized apples, then slice them up into fairly thin slices. For this next part, you can use sugar, brown sugar, Splenda, or any other sweetener that you prefer–I used Splenda because my father in-law is diabetic and I wanted him to be able to enjoy this amazing dessert as well. Place the apples in a mixing bowl, followed by about 1 Tbsp lemon juice, 1/2 C your choice of sweetener, about 1 Tbsp ground cinnamon, and a pinch of salt. Stir to coat the apples thoroughly and let the mixture sit for about five minutes. Now, lay thawed puff pastry out flat and cut it into three rectangles– it comes folded into three sections so just cut it at the fold lines. Preheat the oven to 400 degrees and place the rectangle strips of puff pastry onto a baking sheet that is lined with parchment paper. Next, arrange the apples down the center of each rectangle, leaving about 1/2 an inch on all sides (I layered each apple slice slightly on top of the previous apple slice to make it look pretty). Once you’ve placed all of the apples onto the pastry, brush the exposed pastry edges with melted butter. If you have any leftover butter, you can drizzle it over the apples, as well. Bake in the 400 degree oven for 16-18 minutes until the edges are golden brown. Remove it from oven and serve immediately with either whipped cream, vanilla ice cream, or just by themselves.
