Asparagus & Broccoli Beef

I’m a huge fan of Asian food and one of my favorite go to dishes when I go out to a restaurant is Broccoli Beef. Last week, I made this dish at home and decided to add asparagus, as well. Let me tell you, it was amazing! I especially love this recipe, because it’s quick, easy, and absolutely delicious. The fresh, crisp broccoli and asparagus are so refreshing. I also like to add peanuts or cashews for an extra little crunch.

For this recipe, use your favorite cut of meat (I used New York steak this time since it was on sale). Finely slice the meat into strips and then place the strips in a slurry of cornstarch and water. Next, chop up the asparagus and broccoli. In a small bowl, combine soy sauce, ginger, minced garlic, water, brown sugar, sesame oil, and cornstarch and whisk until combined. Add some olive oil to a wok over medium-high heat and stir fry the steak until almost done. Then, remove the steak, add the asparagus and broccoli to the wok and cook until slightly tender. Once the veggies reach that point, return the steak to the wok, pour the sauce over the mixture, and cook until slightly thickened. Serve with your favorite side and enjoy!
