One of my all time favorite chicken dishes is Chicken Lombardy. Food from the Lombard region in northern Italy is a bit different from other Italian cuisine in that it is more meat-based and buttery, often lacking tomatoes.  Chicken Lombardy certainly meets that description!  It’s essentially Chicken Marsala, but with an extra layer of love.  Let’s take a minute to talk about Marsala wine. I love the incredible aroma and warmth from the Marsala wine. It’s just so comforting, especially on a cold winter evening. I love cooking with Marsala. It’s warm, bold aroma makes any dish pop. Marsala is a fortified wine produced in and around the city of Marsala in Sicily, Italy. It has been mass produced and commercialized since 1796. The Marsala sauce, alone, makes Chicken Marsala amazing, but what could make Chicken Marsala better? The glorious, melted, mozzarella and parmesan cheese. I also like to add spinach to make it a little healthier. It’s surprisingly easy to make and so delicious.

First, season some flour with Sylva’s Kitchen Fault Line Seasoning and Italian seasoning. Next, pound the chicken breasts flat with a mallet (Tip–covering the chicken with plastic wrap before bludgeoning it can help keep the preparation area cleaner) and then dredge the chicken breasts in the flour. Melt some butter in a skillet, add mushrooms, and cook until tender. Remove the mushrooms from the skillet.  Add some more butter, olive oil, and the dredged chicken to the skillet. Brown the chicken breasts on each side for 2-4 minutes until golden brown. Place the browned chicken breasts in a baking dish. Add a little more butter to the skillet, along with broth and Marsala wine, and simmer for about 10 minutes. Place spinach and mushrooms on top of the chicken and pour the Marsala wine mixture over the top. Mix together the mozzarella and Parmesan cheese and sprinkle evenly over the top. Bake in a 450 degree oven for about 15 minutes.

I like to serve it with roasted potatoes, rice, or mashed potatoes. I hope you enjoy this as much as my family and I do.
