Hey everyone, today we are going to talk about another one of our favorite recipes, chicken piccata. This dish packs so much flavor and is quite easy to make. Piccata originated in Italy where it’s popular with veal. In the US, chicken has surpassed veal as the popular vehicle for this tangy, savory dish. Piccata is a dish that is made with garlic, butter, capers, chicken broth, and lemon juice that can be garnished with parsley and served with anything from rice pilaf, mashed potatoes, to your favorite vegetables. The tangy flavor that the capers and lemon juice give this dish goes very well with any of your favorite vegetables. I like to serve it with zucchini, asparagus, or broccoli, but it works with any other vegetables I might have on hand, too.

To prepare this dish, place boneless, skinless chicken breast on its side and slice down the middle to “butterfly” it, then put the chicken breast in a large ziplock bag and pound it with a meat tenderizer until it’s flattened evenly (the bag contains the mess!). Next, combine flour, Sylva’s Kitchen Lemon Pepper Perfection, and Parmesan cheese in a bowl or dish large enough to dredge the chicken breast. Place some olive oil and butter in a large skillet over medium heat to start warming up. Dredge the chicken breast in the flour mixture until thoroughly covered. Place the dredged chicken breast in the skillet and fry on each side for about three minutes. Remove from the skillet, placing it in an oven-save casserole dish, and repeat with the remaining breasts. Once all the chicken is cooked, add lemon juice, capers, and chicken broth to the skillet and let simmer for 5 minutes, scraping the cooked-on bits with spatula (deglazing the pan) to make sure all the flavors will be included in the final dish. Add some more butter to the skillet and whisk together. Next, pour the mixture over the chicken and bake in a 375 degree oven for about 15-20 minutes. Serve with your favorite sides.
