I don’t know about you, but Fall is one of my favorite seasons of the year. The air has a chill to it. There’s dew on everything almost every morning. It gets dark earlier and we get an extra hour to sleep in! The leaves on the trees start to turn to amazing shades of reds, yellows, and oranges. It’s finally time to start cuddling up in front of a fire and enjoying movies. With it being cooler, I instantly start to crave things like soups, casseroles, and anything pumpkin. That brings us to the dish we are going to talk about today. Now, to me, nothing says Fall like a nice, warm, comforting bowl of pumpkin curry noodles. It’s not a family recipe or one that I’ve had at any restaurant—sometimes I just like to experiment with flavors! Most of the time the results are really good, but in this case, the end result was amazing!
The weather had turned cooler and I was craving something warm and filling. I had some leftover canned pumpkin and decided to throw together something new, and I’m so glad I did! I started with a little butter, then added some minced garlic and ginger. Then I added the pumpkin, some amazing Indian Essentials Butter Chicken seasoning that I got from Costco, chicken broth, and heavy cream. All you have to do is mix it up and let it simmer for a few minutes on the stove. It’s so simple, but with those few ingredients you have an amazing sauce that you can put over pasta or whatever you like. My cousin even liked it and even she admits that she’s one of the pickiest eaters you’d ever meet!
Now, put this sauce over noodles and it’s great by itself, but the recipe I’m sharing with you today is taking a side dish and turning it into an entree. Cube some chicken breast and season it with the Butter Chicken seasoning. Sauté the chicken and add the cooked chicken to the pumpkin curry noodles along with diced, cooked carrots and frozen green peas. This is a quick, easy, and extremely tasty dinner for any night of the week. Next time you want a soul-soothing bowl of deliciousness, give this one a try. Enjoy!
