Sylva’s Kitchen Pork Tenderloin Stew

Hello everyone, today we are talking about a delicious and easy meal that is perfect for a cold and stormy evening. One of my favorite dishes during the winter is stew. This one is our pork tenderloin stew. Any type of stew is great, but this one is especially delicious. The meat is so tender and perfect. I really like to get it started earlier in the day and let it slow cook in the oven for several hours to fill our home with that rich stew aroma. A while back, we finally had some stormy weather and I decided to make stew. We didn’t have any beef in the house, but I remembered that we had some pork tenderloin and decided to give that a try. Boy, am I glad I did! In my opinion, it’s one of the best stews I have ever made. I added some Marsala wine to add extra depth to the flavor.

For this dish, start by preheating the oven to 250 degrees. Next, take two pork tenderloins and cut them down the middle lengthwise, then cut them in half lengthwise. Add flour, Fault Line seasoning, and thyme to a gallon sized Ziplock bag and shake until thoroughly mixed. Toss the pork in the flour mixture until coated on all sides. Now, heat oil in a large oven-safe pot, add the flour-coated meat to the hot oil, and brown on all sides–work in batches, if needed, until all of the meat is browned. Remove meat from the pan and set aside. Now, add carrots, celery, and onion to the pan and cook until the onion is slightly translucent. Then, add some Marsala wine to the veggies and stir until pan is deglazed. Add garlic to the vegetables and return the meat to the pot. Add the broth and Worcestershire, give everything a stir, and bring the mixture to a boil. Once it boils, cover the pot with a lid, remove from the stove, and place the pot in the oven for 2-3 hours (until everything is tender, and the meat falls apart). Now, open a can of canned biscuits, separate them, and cut them into quarters. Place the cut biscuits on top of the mixture and bake for another 5-10 minutes until the biscuits are cooked. You can add potatoes to this stew, if you’d like, or serve it over rice or pasta. It’s delicious any way.
