Hey everyone, today we are going discuss a dish that tastes amazing and is really so darn easy to make. Yet, when you make this delightful dish, people will assume that you are some sort of amazing chef with years of training under your belt. This is one of my favorite shrimp dishes–Shrimp Scampi. Shrimp scampi was first mentioned in American cookbooks published way back in 1920 as a dish cooked with olive oil, white wine, garlic, and butter. My shrimp scampi dish has a few more ingredients than the original recipe, but it’s such a quick meal to fix. My recipe one uses olive oil, white wine, garlic, and butter, but also includes lemon juice, red pepper, shallots, and parsley. If you want to make it even more of a balanced meal, it’s great to add some veggies such as zucchini or grape tomatoes. My family prefers to serve this shrimp dish over linguine as the noodles soak up the scampi sauce and it tastes heavenly. The most time consuming part of this recipe would probably be the preparation of the shallots and parsley. I also prefer to peel the shrimp and remove the tails before cooking (easier to eat!), but you can do it however you’d like.
First, get everything prepared. Chop up the shallots, garlic, and parsley. Juice the lemon into a small dish and measure out the wine and olive oil that will be used to make the sauce after cooking the shrimp. Then it’s time to cook! Heat oil in a skillet. Place the shrimp in a single layer in the skillet and season with a pinch of salt and pepper. Sauté shrimp on each side for one to two minutes, just until pink, then remove the shrimp from the skillet (set aside on a plate or bowl) and return the skillet to the heat heat. Add olive oil, shallots, and garlic to the skillet and cook until the shallots are translucent. Add butter, lemon juice, white wine, red pepper flakes, and parsley (reserve a bit of parsley for garnish). Cook over medium heat until the sauce is slightly thickened. Return the shrimp to the skillet and garnish with more parsley. Serve alone or with your favorite pasta. Enjoy!
